JOB DESCRIPTION

At Hilton Dubai Palm Jumeirah, a Chef de Partie (Bakery) is responsible for supervising staff and ensuring high levels of food preparation to deliver an excellent Guest and Member experience while assisting with food cost controls.

What will I be doing?

A Chef de Partie (Bakery), will supervise staff and ensure high levels of food preparation to deliver an excellent Guest and Member experience. A Chef de Partie will also be required to assist with food cost controls. Specifically, you will be responsible for performing the following tasks to the highest standards:

  • Responsible for ensuring that all pastry or bakery products delight by the quality, creativity and variety such as cake, tart, pudding.
  • Able to make an assortment of breakfast items such as croissant, Danish, muffin, bread loaf and bread rolls.
  • Knows how to make waffle, pancake and prepare with condiments.
  • Responsible for the oversight of all culinary items that are prepared in their pastry section or bakery section.
  • A successful Chef De Partie must be very knowledgeable about their specialty, as well as culinary functions in general pastry and bakery.
  • A person in this role must also be very organized and comfortable working in high-pressure environment.
  • A Chef De Partie must also be able to give orders within their section, as well as reliably carry out orders handed down to them by the pastry chef.
  • Ability to work as part of a larger team.
  • A good level of spoken/written English
  • Ability to learn quickly and work in fast paced environment.
  • Enthusiasm and commitment to the job.
  • Previous similar kitchen experience at least 2 years.

  • A minimum of 2 years of previous experience as a Chef de Partie or strong experience as a Demi Chef de Partie role
  • A current, valid, and relevant trade commercial cookery qualification (proof may be required)
  • Strong coaching skills

  • Excellent communication skills
  • Achieved Basic Food Hygiene Certificate
  • Supervisory experience
  • Positive attitude
  • Ability to work under pressure
  • Ability to work on own or in teams

It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:

  • Previous kitchen experience in similar role
  • Intermediate Food Hygiene
  • Knowledge of current food trends
