- Assist the Head of Culinary and Sous chefs in planning and organizing daily kitchen operations.
- Supervise and mentor kitchen staff, including cooks, prep cooks, and kitchen assistants.
- Oversee food preparation, cooking, and presentation to ensure consistency and quality.
- Assist in developing new menu items, recipes, and culinary techniques.
- Monitor inventory levels and order supplies to maintain adequate stock levels.
- Ensure compliance with food safety and sanitation standards, including HACCP guidelines.
- Train kitchen staff on proper food handling procedures, safety protocols, and kitchen equipment usage.
- Assist in scheduling kitchen staff to ensure adequate coverage during peak hours.
- Collaborate with other departments, such as food and beverage, catering, and banquet operations, to meet guest needs and preferences.
- Assist in controlling food costs and minimizing waste through efficient production and portion control.
Ideally, you should possess some or all the following qualifications and experience:
- Preferable candidates with Pre-Opening Hotel experience.
- Culinary degree or equivalent certification from a recognized culinary institution.
- Minimum of 2-3 years of experience in a professional kitchen environment, preferably in a hotel or upscale restaurant.
- Strong knowledge of culinary techniques, cooking methods, and food safety principles.
- Experience in supervising and training kitchen staff, including delegation of tasks and performance management.
- Creative flair and passion for experimenting with ingredients, flavors, and presentation.
- Excellent organizational and time management skills, with the ability to prioritize tasks in a fast-paced environment.
- Effective communication and leadership skills, with the ability to motivate and inspire team members.
- Flexibility to work evenings, weekends, and holidays as required by business needs.
- Ability to work well under pressure and adapt to changing priorities and situations.
- Knowledge of kitchen equipment operation and maintenance.
- Familiarity with menu costing, inventory management, and budget control.
- Knowledge of international cuisines and specialty diets (e.g., vegetarian, gluten-free).
